Illusion of Blis

was brewed with a base of 75% spelt and 25% wheat, hopped with noble Saaz and Tettnang hops, then fermented and aged for over a year in the finest Danish cherry wine barrels with a mixed culture of Saison yeast, Brettanomyces, and our house culture. It’s a blonde beer with the flavor and aromatics of a beer that was conditioned on cherries! Pretty incredible how much cherry character and complexity came out of these fresh cherry wine barrels. It’s been conditioning in bottles for nearly 6 months so it’s ready to go! Cherry lollipops, oak, delicate rustic farmhouse character, some tropical pineapple and mango, amazing acidity, and prickly effervescence.

Spelt Mixed Fermie™ fermented in oak with a mixed culture for 13 months then refermented with 450g/L of sliced whole peaches. It’s very delicate, soft, and thirst quenching with a perfect acidity. A recent favorite of ours.

Covered In Nothing
6.5% ABV
Barrel-fermented, farmhouse-inspired Mixed Fermie™. It consists of a blend of hand-selected barrels that aged for over 15 months. It was brewed in March of 2017 (on our original brew house) with the finest Pilsner malt, oats, spelt, and unmalted wheat. We chose a very expressive Saison yeast strain as well as one of our favorite Brettanomyces strain to co-ferment Covered In Nothing in French oak red wine barrels. We are very pleased with what it has become.  Bright citrus, ripe stone fruit, elegant minerality, Sauvignon Blanc must, damp cellar, perfectly restrained acidity. Bottle-conditioned and refined for over 7 months.
