Dwell

is our koelschip open-fermented lager! We pumped lager wort into our koelschip on a cold winter day, pitched yeast and allowed the beer to open-ferment for 8 days. We then transferred the beer into wine barrels which we stored in our walk-in cooler for over three months of lager conditioning. We then bottled Dwell at our Fünkhaust and allowed it to condition for over five months. Crisp like a lager with an added layer of oak and a hint of wild funk to it!

Barrel-fermented and inoculated version of New Sun. Fermented and conditioned in red wine French oak barrels for 12 months, then bottle conditioned for 6 months, Old Sun has notes of zippy apple, pear skin, white wine grape, beautiful yet restrained acidity, wonderful carbonation, with a Chardonnay body.

Closer Glimpse Merlot

is blended 19 month and 28 month, spontaneously fermented Lambic-inspired ale. It was brewed using a traditional turbid mash bill/process, aged leaf hops, an extended boil, then naturally cooled and inoculated in our koelschip, barrel-fermented and aged. We then conditioned it on 700g/L of whole, Virginia merlot grapes from @flyingfoxwines!

Brenner Pass: Grand Cru

is the House Beer for @brennerpassrva that we put away for some time and inoculated with our house culture. We’re releasing it to celebrate their belated second anniversary. It’s a Mixed Fermie™ brewed with spelt, raw wheat, and floral American hops. It is the more refined and elegant version of this already delicious beer made exclusively for @brennerpassrva. Very Chardonnay-esque, funky, and dry with a very subtle acidity. Drinks like a really good table wine.

Make You Feel

Make You Feel is open fermented with a mixed culture in our koelschip for 48 hours and then transferred into fresh Virginia @RdVvineyards French oak red wine barrels. It then finishes fermentation and further conditions in the barrels for 13 months until mature. Light, vinous, bright wine aroma, balanced elegant acid, subtle honey, hay, musty oak cellar in a good way.
